AFTERNOON TEA – 1864
From 16 August, guests may indulge in a leisurely afternoon tête-à-tête with an exquisite selection of bites, served alongside grand cru coffee and tea blends by Nespresso and TWG Tea respectively.
Afternoon tea begins with savoury elements, headlined by an exotic baked frittata featuring octopus and smoked cayenne pepper aioli. Smoked Atlantic salmon sandwiches provide a twist on a traditional teatime staple with layers of delicate fennel pesto. A decadent rendition of Kueh Pie Tee completes the line-up of savoury dishes, each mouthful bursting with crab meat and caviar crème.
No afternoon tea would be complete without a variety of sweets, and Executive Pastry Chef Sam Leong has designed a dance of flavours and textures to entertain the palate. His indulgent chocolate tarts are made with smooth Valhrona Jivara 40% blend imbued with Jerusalem artichoke for heightened flavour. A bittersweet pairing of matcha and azuki bean finds harmony in a delightful genoise. Meanwhile, crispy croissant waffles are juxtaposed against a topping of creamy truffle camembert cheese.
Scones are served classic or with a filling of rum-infused dried fruits, accompanied with a side of clotted cream and Bonne Maman marmalade. The dessert selection is replete with chef’s choice of assorted macarons and bonbons.
Sip on a selection of 13 blends of grand cru coffee by Nespresso prepared to preference, or TWG Teas including the hotel’s exclusive Singapour Je T’aime tea blend. Guests may also opt for a beverage upgrade to handcrafted cocktails or Duval-Leroy champagne for $20++ or $36++ respectively.
