July Set Lunch x Da Dong Prawn Noodles

Kicking off the series, Racines joins hands with the second generation owners of Da Dong Prawn Noodles in a showcase of local hawker culture.
For the month of July, look forward to set lunches featuring local hawker fare at Racines. On Tuesdays, Watson Lim and his team from Da Dong Prawn Noodles will be serving their signature bowl of prawn noodles. A recipe perfected by his father since 1966, the deceptively simple prawn noodles is famed for its well-balanced broth and has received its stamp of approval from locals. Light yet flavourful, each mouthful of vermicelli is soaked in its sumptuous goodness alongside fresh tiger prawns. A generous sprinkling of crispy pork lard, spring onions and bean sprouts complete the dish.
Racines’ very own Executive Chinese Chef Andrew Chong takes over for the remainder of the week, offering a bevy of his own local specialties. Chef Andrew’s rendition of Bak Kut Teh, a staple of Singapore’s hawker scene, punctuates his repertoire. Pork ribs are braised in fragrant white pepper and Chinese herbs with tender chunks of meat falling right off the bone. The heart-warming dish is served alongside homemade “you tiao” dough fritters and steamed rice topped with fried shallots. Chef Andrew will also be putting forth a classic Singapore-style Oyster Omelette served alongside lip-smacking dried chilli paste.
