October Set Menu


Executive Chefs Jean-Charles Dubois and Andrew Chong have curated an exquisite menu for set lunch and degustation dinner throughout October.
For appetisers, diners may sip on a hearty “Kartoffelsuppe” potato soup with chorizo or tuck into luscious Oriental-style salmon tartare with kaffir lime vinaigrette, avocado mousse and celeriac. Mains selections include pan-fried butter barramundi wrapped with Feuille de Brick alongside stewed Beluga lentils and dried sole emulsion, as well as Executive Chinese Chef Andrew Chong’s chargrilled Australian Wagyu chuck roll with fried caramelised ratte potatoes. As a sweet ending, tuck into a soothing red bean pudding, served chilled alongside chendol coconut sorbet and coconut emulsion.
